• 1 cup almond meal
  • 1 egg (free-range)
  • 1/4 cup coconut water
  • 1 Tbsp melted butter
  • 1 Tbsp honey
  • 1 tsp cinnamon (optional)
  • Few drops of vanilla extract (optional)
  • Butter or coconut oil for frying


  1. Place all dry ingredients in a bowl, whisk
  2. Place the melted butter and liquid honey in a small bowl and whisk till combined
  3. Pour the wet ingredients into the bowl with the dry ingredients, combine
  4. Melt butter and/or coconut oil in a pan on medium to low heat
  5. Pour dollops of the mixture onto the heated pan, cook till small bubbles appear on the surface, flip and cook for same length of time on the other side
  6. Slide onto a plate, top with your favourites and enjoy!


You may need to add more butter and coconut oil to the pan before adding more batter
