• 40g butter
  • 1 small diced onion
  • 5 button mushrooms diced
  • 2 rashers of bacon
  • Small handful of parsley chopped
  • 6 eggs (free-range)
  • 2 cups baby spinach leaves
  • 80g grated cheese
  • 1/2 cup cream (option coconut cream)


  1. Preheat oven to 160℃ bake and grease a 12 muffin tray
  2. Melt butter in frying pan and fry the onion, mushrooms and bacon till slightly caramelised on medium heat
  3. Take off heat and add herbs and a drizzle of honey
  4. Crack eggs into a bowl, add cream, salt and pepper, whisk
  5. Divide mixture in the pan between muffin slots in a small 12 muffin tray
  6. Sprinkle over the baby spinach evenly and 80% of the grated cheese
  7. Pour over the egg mixture
  8. Sprinkle with the remaining grated cheese
  9. Bake till just set approximately 8 minutes


Use a sharp knife when dicing the onion and breathe through your mouth to prevent those tears!
